Henbit – yet another edible weed

Henbit (Lamium amplexicaule) is found in just about everyone’s yards and pastures in these parts.  Although it’s a weed, I admire the beautiful purple flowers when they pop up every February (and in this case in January).  Chickens love it (hence the name), but it’s also apparently an edible green.  Sometimes it pops up in the lettuce patch and occasionally pieces of this plant get in our lettuce mixes.  In the future, instead of feeling guilty about this contamination, I suppose I’ll charge extra for the lettuce+henbit mix :).
